This recipe amuses me a lot with its name, a steak! Over time, my habits have changed so much that I never want steak or anything like that. I appreciate falafel for example. But it’s completely different from a steak.
Besides, it makes me think of these new steaks resembling 100% meat without containing it. It makes a lot of noise in USA, they want to develop it so that it becomes something banal. Personally, I’m not sure I’m really for. All imitations of meats in vegan version do not tempt me at all. The principle remains to resemble animal flesh. So it’s not consistent. Either you don’t want to eat the animals anymore or you continue, right?
So I know, some will tell me it’s always better than eating real meat. In part yes but on the other hand, I do not think so. This substitution does not harm the animals and it must pollute less. But is it better for health? The meat is not good for us, the documentary Food Choices proves it to you. But fake meats made from dubious mixtures of gluten proteins should not be great. There is not much healthy thing in it, don’t you think?
So, I prefer to stay on unprocessed products. This cauliflower steak with zaatar is delicious and simple to make. It will not replace your red meat but will be 100% better for your health. For protein, I made a small salad of lettuce, spinach, quinoa and beans.
Cauliflower steak with zaatar
For 4 serves
Vegan / Gluten free
Preparation time : 10 minutes / Cooking time : 30-40 minutes
3 tbsp olive oil
2 tbsp zaatar
salt and pepper
Wash the cauliflower. Cut in rather thick strips. Arrange them on a baking sheet covered with parchment paper.
Mix the olive oil and zaatar in a small bowl and brush the strips of cauliflower with. Salt and pepper.
Bake at 180°C for 30 to 40 minutes
