I do not know you but I find that the pear and the almond go very well together! I wanted to combine these two elements that I appreciate very much in a cake. The pear and almond fondant is already known but I needed a vegan version! Believe me, this adaptation is bluffing! I did it at a family lunch, everyone liked it.
As much as I can understand that some of you like meat or cheese and do not stop. But I find that for some things we can largely do without animal products. Cake is the best example. There are so many simple and inexpensive alternatives to butter, eggs or milk. The dairy industry will detest me but plant milk is really better for your health and better for the taste! Try an almond milk for example, you will see, it is a delight. In addition, I see the development of more and more plant based products in supermarkets. It’s very simple to find plant milk. Taste it and you will tell me!
I also tell myself that I don’t make enough dessert here. The vegan adaptations are very interesting and I sincerely want to offer you more sweet things. It is possible to vegetalize everything without losing the taste (on the contrary, by gaining flavors). So don’t wait a second to taste this pear cake!
Pear and almond fondant
For 6 personnes
Preparation time : 20 minutes / Cooking time : 45 minutes
1 1/2 cup whole spelt flour
1/2 cup almond ground
2 tbsp baking powder
1/2 cc baking soda
1 pinch of salt
3/4 cup whole sugar
1 tsp cinnamon
3/4 cup plant milk
1 tbsp cider vinegar
1 tbsp grape seed oil
1 tsp bitter almond essence
Preheat oven to 180 ° C.
Mix vegetable milk and cider vinegar.
In a large bowl, combine the dry ingredients.
Add to the milk preparation, oil and bitter almond. Mix and pour into dry preparation. Mix to obtain a homogeneous result.
Pour into a round pan. Peel and cut the pears into strips and spread them over the cake. Sprinkle with cinnamon and sliced almonds.
Bake at 180 ° C for 45 minutes.
