At the moment I only eat soup in the evening. It’s light and above all, it warms me! So I mix several things together and I see what it gives. I was brought up with the idea that a soup is made up of vegetables that swallow. That is what I do very often. Except this time…
As I never know too much what I would like to eat in the evening, (all depends on my hunger) I make sure to have everything I need! And here, I must admit that the freezer is a beautiful invention. So, I buy big bags of vegetables from Picard and I’m sure to always have something to eat.
The main ingredients for me are broccoli, leeks, courgettes and carrots. Unfortunately I can not buy ready-made soup since they contain all milk or cream (whether brick or frozen). At least, this has the advantage of forcing me to eat non-processed products. Did you know that sometimes it’s better to eat frozen than fresh vegetables? We often make the mistake of leaving them too long in the fridge and they lose all their vitamins! Things happen much less with frozen vegetables.
This soup is very simple and is realized fairly quickly. It contains only vegetables and water. Honestly I hardly add anything else. This may seem bland but the taste of vegetables is sometimes enough. I hope it will make you want!

Vegan / Gluten free
Preparation time : 5 minutes / Cooking time : 30 minutes
1 broccoli (or 4 cups frozen florets)
2 leeks (or 2 cups frozen leeks)
2 zucchini (or 3 cups zucchini in frozen slices)
salt and pepper
In a large pot, pour all the ingredients and cover with water. Cover and cook for 30 minutes (40 minutes drive for frozen vegetables).
When the vegetables are melting, mix with a hand mixer. Season and serve.
