Hello everyone ! I hope you have a good weekend and you are fine. Next Thursday will be the Candlemas. This is the day to make crêpes with family or friends. But if you are like me, you need another recipe than the classic crêpe recipe.
We always enjoyed the crêpes in my family (I guess that’s the case in many other families!). My mother and my grandmother always used to make crêpes regularly, especially on Sunday to finish the leftovers of the week. We simply put the jam, chocolate spread or simply sugar. As my lifestyle has evolved a lot in recent months and I’ve become vegan, crêpes with milk and eggs were no longer for me. I then went in search of a recipe that could be plant based but delicious.
There is a miracle recipe of buckwheat crêpes that I will unveil to you as quickly as possible but today is the simple crêpes that I wanted to give you. It is as easy to make as a non-vegan version and does not require more ingredients or hard-to-find things.
Right now, I’m more a fan of a single spoonful of jam on my crêpes, chocolate spread that I devoured being smaller is no longer really wanted me.

Vegan french crêpes
For 15 crêpes
Preparation time : 10 minutes / Cooking time : about 6 minutes (per crêpes)
2 1/2 whole spelt flour
2/3 cup corn starch
1 cup cold water
2 1/2 cup plant milk
2 tbsp vegetable oil
1 pinch of salt
Mix cold water and cornstarch. Leave to stand for 5 minutes.
Then whisk together spelled flour, oil, water and cornstarch mix and salt. Add little by little the plant milk.
Personally, I did not bother the dough rest and I did not have a problem.
Heat a frying pan and pour a ladle of dough. When it becomes dull and it comes off, return. And leave 3 minutes.
