The recipe that I propose today will not warm you but it is delicious! It may seem a bit complicated but it is not. It is actually quite close to the chocolate pie with red fruit. I just prefer a different presentation. We happen to have chocolate cravings or sweet without wanting a large piece of pie. These “bars” will be much more adapted to these moments.
The red fruits bring a lot of lightness and a really nice taste! Coconut milk gives sweetness and the biscuit brings crunchy.
Once cut you can place them in a container and store about 4 to 5 days in the fridge. This will allow you to have a delicious taste (or respond to a desire for chocolate…).
Chocolate and coconut bars with berries
Pour 12 bars
Preparation time : 30 minutes / Cooking time : 25 minutes / Rest time : 4 heures
1 1/4 cup whole spelt flour
1/2 cup rapadura sugar
1/3 cup almond powder
1/4 cc baking powder
1 pinch of salt
3 tbsp grape seed oil
5 cs plant milk
Chocolate ganache :
200g of dark chocolate 70%
400 ml canned coconut milk
1 cup of red berries
Combine flour, sugar, baking powder and almond powder. Add the oil and mix with a fork. Then, pour the plant milk and mix. Finally, knead and flatten by hand in the bottom of a rectangular dish.
Bake at 200°C for 25 minutes. Remove from the oven and let cool.
Prepare the ganache by heating the vegetable milk in a saucepan. When you see a start of boiling, remove from the heat and pour over the chocolate. Leave 5 minutes and start mixing. The ganache must be completely homogeneous. Pour into the pan with the biscuit.
Add the berries, spreading all over the mold.
Place in the refrigerator for 4 hours. Once cooled, remove from the pan and cut into pieces.
