I always loved the tarts, especially the almond tarts. There is nothing better than this almond fondant and touch like a biscuit. It’s sweet as a little biscuit. It is pure delight. The only negative I have often criticized for these little tarts was the lack of fruit and butter a little too present for my taste. This became fat and less appreciable.
Now that I only eat whole foods (interesting nutritionally) and plant based, I had to do without many things for a tasty result. I started looking for several recipes here and there to make a perfect set. The sugar and flour I used are both whole. It is quite important contrary to what one might believe, it seems to me even essential. All refined products such as sugars and white flour do not bring you any nutritious benefits. They are devoid of all vitamins, fibers or minerals. In my opinion, that is a bit of a shame. So of course, the sugar is to consume in small quantity but if one eats, as long as it is of good quality.
I sincerely think this recipe will please you. It is really very very good! The fruit is really very present and it is not fat. You can only love it! Only preparation can stop you because it’s long to cook it (and does a lot of trouble in the kitchen!).
Vegan apple and almond tart
For 6 tarts
Preparation time : 1 hour / Cooking time : 30 minutes
Biscuit pie dough:
150g (1 1/4 cup) whole spelt flour
50g (1/2 cup) rapadura sugar
30g (1/3 cup) almond powder
1/4 tsp baking powder
3 tbsp grape seed oil
5 tbsp plant milk
1/2 tsp almond extract
1 pinch of salt
70 g (1/2 cup) whole spelt flour
100g (1 cup) almond powder
60g cornstarch or arrowroot
300 ml (1 1/3 cup) plant milk
3 tbsp rapadura sugar
1/2 tsp almond extract
2 tbsp rapadura sugar
Peel and cut 6 apples into small cubes. Cook with 1 glass of water and 2 tablespoons of rapadura sugar. Let simmer until the consistency of a compote with pieces.
At the same time, prepare the dough. Sieve flour, sugar, sugar, baking powder and salt. Add the grape seed oil and mix with a spatula. Pour the vegetable milk and knead the dough, do not hesitate to add flour if it is too sticky. When the dough is homogeneous, oil your molds and crush the dough with your fingers to covers the entire mold.
Prepare the almond preparation by mixing the spelt flour, sugar, almond powder and starch. Pour almond milk and almond extract. Mix with a whisk.
When the compote is ready, start by lining the bottom of your tarts with it. Then pour some of the almond preparation. Place apple slices on top, sprinkling lightly with sugar and add a few sliced almonds.
Bake at 180 ° C for 30 minutes.
