I believe I told you before but I really grew up with soups. One of my greatest memories of my grandparents are the soups my grandmother prepared me for the winter. I still remember feeling this delicious smell throughout the house. It was night so early! One of my favorites was the pumpkin soup. I still eat very often in winter. I think it’s not a recipe, it’s so simple! I only added my little plus, coconut milk and chili. You only need a pumpkin, water, coconut milk, chili powder and topping of your choice.

Spiced pumpkin soup with coconut milk
Vegan / Gluten free
For 4 personnes
Preparation time : 15 minutes / Cooking time : 30 minutes
1 pumpkin (small)
1 can of coconut milk
2 tbsp sweet chilli
salt and pepper
Dice and peel the pumpkin.
Put the pieces in a large saucepan with 1 liter of water and coconut milk. Salt, pepper and add the chili. Simmer.
When the pieces of pumpkin are melting, mix and serve.
You can add sliced almonds and a little more chili in topping if you like.
