I hope that your Christmas went well, that you could be with family or with your loved ones and that the magic of this period was at the rendezvous. For my part, my Christmas Eve was very pleasant. It was in a very small and simple setting but I loved it.
If you follow me on Instagram, you may know I was sick. I have a flu since Thursday and I was not in great shape for this evening so the passing calmly did not displease me!
Unlike other years that were not yet vegan, I did not have any stomach aches on 4 days after a lot of food! I certainly, very, or even a little too much to eat the 24 but I was not sick. Moreover, one can sincerely eat 100% plant based without feeling a lack. There are really ten thousand possibilities. I could not show you all I can do because I worked this year. However, I hope that for next year, I would have a lot of holiday recipes to offer you.
Christmas day was with my favorite dish: spaghetti with truffles. I love natural truffle, cooked in this way! It is a real treat. The recipe is however the simplest in the world, you need fresh pasta (without egg for a vegan version), neutral oil like grape seed oil and truffle. Strangely, I am not a big fan of the texture of it, I find it rather rubbery, its its aroma that I like. So we do not need much. You grind a small pieces in oil heated at low heat and you let the truffle perfume the oil. Then you just pour on the cooked pasta.
Tuesday or Wednesday I went to La Maison de la Truffe Place de la Madeleine search for this black diamond. This may surprise you, but it only took 7 grams of black truffle for 2 people. There was still for 30 € but it’s still Christmas! Especially as the other ingredients are not the most expensive. This dish is a really nice option for a particular day like this one. It is a small luxury that remains affordable for ordinary mortals.

In any case, if your meal was a little rich and you want to purify your body, I have the ideal remedy: this salad of lentils, apples and avocado. It is first and foremost a delight that will not make you feel heavy afterwards. All foods are healthy and light. The apple is perfect for detoxing your body. It is made up of 80% water and will rehydrate you (often the reason for headaches the next day). The lentils are rich in fiber and protein while the avocado will bring you good fats.

Detox salad : lentils, apple and avocado
Vegan / Gluten free
For 2 personnes
Preparation time : 10 minutes
1 cup of cooked lentils
2 small apples
3 handfuls of lamb’s lettuce
2 tbsp sunflower seeds
1 tbsp olive oil
2 tsp mustard
1 tbsp cider vinegar
salt and pepper
There’s nothing simpler, cut diced avocado, apples in strips. Then mix together with the others ingredients.
For the seasoning, mix the olive oil, mustard and cider vinegar, salt, pepper.
