Since I was little I watch American series, they have always been part of my life. They have of course evolved over time. My first favorite series had to be Charmed. I loved the story of those witches to whom so much adventure happened! Growing up, I went to Gossip Girl (which was part of my teenage years!). Today, my taste has clearly evolved! I recently got involved with The Crown on Netflix. This series is sublime! But I am moving away from the American series because it is English.
Growing up with stories in New York or California, there was always an episode about Thanksgiving every season. This holiday is one of the most important for Americans. All Americans (who can) spend this four-day weekend with their families (who are often on the other side of the country). It is then that we can observe these perfect families sitting around a large table. They laugh and have fun. But above all, it is a festival of cooking and flavor. The tradition want the meal is sumptuous. He recalled the exchange of food between the Indians of America and the colonists. Very often, this meal is marked by stuffed turkey. It is she who perhaps most symbolizes this celebration. But there is also the famous Pumpkin Pie!
I always have a little fantasy in front of this pretty party. So why not celebrate it? It does not make any sense in France but it is always nice to find excuses to get together as a family, do not you think?
But then there it is. I’m vegan. So there will not be any turkey that cooks in the oven … The possibilities are nevertheless so vast! I kept the idea of the squash. It is a seasonal vegetable and we find a lot for not very expensive. The cold outside made me think of chestnut. It brings a little taste of celebration. I then found the ideal in my organic store: a boulgour of rice with chestnut of Celnat. I wanted the recipe to be as healthy (I know, it all starts to reduce the possibilities!). This bulgur of rice is made with whole rice, so it’s perfect. Patidou squash is high in fiber and low in calories. To add some crunch, I put rocket and pomegranate seeds that explode in the mouth, a delight.
To finish, it required a festive sauce. I headed for something sweet: maple syrup. To raise it a little I also put mustard to the old. The result was really very good. I loved the whole.
This recipe is really very simple but brings a bit of color to this grayish autumn. As we are in France, you can also prepare it for everyday, no need for this special occasion to taste such good things! I hope you like the idea.
Roasted squash, rice bulgur and chestnut with maple syrup sauce
For 4 personnes
Vegan / Gluten free
Preparation time : 30 minutes / Cooking time : 30 minutes
1 big patidou squash
2 cups bulgur of rice and chestnut by Celnat
4 beautiful handles rocket
salt and pepper
1 1/2 tbsp maple syrup
1 tbsp old-fashioned mustard
1 tbsp balsamic vinegar
3 tbsp olive oil
salt and pepper
Start by putting to cook the bulgur of rice with the chestnut according to the information on the package.
Cut into quarters the squash, remove the seeds but leave the skin. Place the quarters on a baking sheet covered with parchment paper. Using a brush, brush with olive oil on both sides of the slices. Season with salt and pepper. Bake at 180 ° C for 25-30 minutes. Turn over the quarters after 15 minutes.
Meanwhile, prepare the sauce by mixing all the ingredients.
When the rice and chestnut mixture is cooked, mix with the rocket and pomegranate seeds. Add half of the sauce.
Serve in a large dish. Place on top the squash quarters and pour the rest of the sauce.
