I was talking with another vegan there are not very long time. She told me that by becoming vegan, it lacked her pancakes. She had put a long time before find THE good vegan recipe. It’s a bit my case with the brownies. I’m not a big eater of pastry but I always had a soft spot for the brownies. Before, I made them very simply and in just 5 minutes. I added butter, flour, eggs, white sugar and 10 minutes in the oven. It was a delight, I must admit it. But today I no longer wishes to make recipes with ingredients of animal origin and completely refined.
My search took some time… Type “vegan brownies” on Pinterest and you will not necessarily find the most inspiring things… I also tested the recipe of sweet potato brownies by Deliciously Ella. They are very good but lacks the true taste and texture of the brownie.
And I did not want to put too much money in this recipe. This chocolate cake is a recipe that must be reproduced by everyone while versions with almond puree and coconut oil, I was not for it.
Finally, it is by working and inspiring me right and left I finally get the version you want. This brownie is so delicious and I found the same facility to do that to the non-vegan version with which I grew up. Remember that it is always possible to make a 100% plant based recipe. Also, if you despair of finding a recipe that is not vegan, please tell me, I’d be happy to find an adaptation! 🌿
For 6/8 personnes
Preparation time : 5 minutes / Cooking time : 12 minutes
1 cup (250 g) plant milk (I used coconut milk of Alpro)
1/2 cup (120 ml) vegetable oil (I used grapeseed oil *)
1 tablespoon vanilla extract
1 cup (120 g) of whole spelled flour
1/2 cup (40 g) unsweetened cocoa powder
1/2 tsp salt
1/2 tsp baking powder
Full 1/2 cup whole sugar
2 tablespoons cornstarch
+ 2/3 cup chocolate chips (optional, I did not do it)
50 g dark chocolate
1 tsp coconut oil
almonds or others to decorate
Preheat oven to 180°C.
Mix the three firft liquid ingredients in a bowl. In another large bowl, combine the remaining dry ingredients. Personally, I have them all sifted. then mix the two preparations together to obtain a homogeneous result.
Line a mold (square for a true form of brownies or round as here) of baking paper and pour the mixture.
Bake for 12 minutes.
* Grapeseed oil is bit pricey and it adapts to a lot of sweet recipes!
