This special Thanksgiving week closes with a mythical recipe of the cake with pumpkin. Thanksgiving is a celebration especially marked by the pumpkin. This is mainly because it is a seasonal vegetable. The advantage with squash is that you can prepare them in a thousand ways. You could see a salty version with my Monday post and my roast squash. Today, I propose a sweet version.
Before being vegan and doing all these new culinary tests, I was a bit skeptical about adding a vegetable into a sweet preparation. It was the same with my sweet potato brownie… Actually, it’s a bit stupid. You have to try new things and be curious. I understand it every day. The kitchen is inventive. You have to have fun with new things and not be afraid of somewhat bizarre ingredients.
The preparation is quite simple, everyone can prepare it. But the end is amazing! I thought he would have the taste of pumpkin but it is much more subtle. All the spices that are added give a taste of gingerbread. The pumpkin makes the cake soft and melting. It is not compact and dry.
I was not convinced but the flavor is perfect! This is the ideal dessert for Thanksgiving or for those family winter Sundays. It will also accompany very well a cup of tea in the afternoon.

1 small pumpkin
3 cups spelled flour
2 tsp sodium bicarbonate
1 tsp of baking powder
1 tsp cinnamon
1/2 cc clove (reduced to fine powder)
1/2 cc salt
1 cup of vegetable oil
2 cups whole sugar
2 cups soy yogurt
1 tbsp lemon juice
4 tbsp icing sugar
Peel and cut the pumpkin into cubes. Steam for 20 minutes until melted. Mash them.
Preheat oven to 180 ° C.
Combine flour, baking soda, baking powder, cinnamon, cloves, sugar and salt.
In another bowl, combine soy yogurts with vegetable oil and pumpkin purée. Pour this mixture into the dry mixture of flour and spices.
Mix to obtain a homogeneous result. Pour into a round oiled mold or with parchment paper.
Bake at 180 ° C for 1 hour. Meanwhile, make the icing by mixing icing sugar and lemon juice. When the cake is cooked, pour the icing on the cake and spread well.
