Speaking of spring rolls with wind gusts that there out is not the best idea, I grant you… That’s why I adapted the ingredients in season. You will not find cucumber or other summer vegetables but Chioggia beets (my favorite!), Cabbage, kale, sweet potato and avocado. The mixture of crunchy beetroot and melt avocado and sweet potato does wonders, it goes very well together.
I do not know about you but I love snacking in the evening I do not make me big rich dishes. It’s fruit, soup or that kind of thing. There is also a somewhat amusing side with this “finger food”. You can prepare for you but also as an appetizer if you are receiving friends. In this case, I advise to make them smaller. It’s also the kind of thing that can make the weekend for example.
The sauce that accompanies them is incredible! I do not love peanut butter usual but I can not resist this sauce! I do the same to accompany some rice sometimes. I also have other ideas in head…
Another tip, do not give up the first run. For me, it was a bit laborious … but it does not matter! Simply just a little practice. The helping hand comes soon after.
Spring Rolls with winter vegetables and peanut sauce
For 10 rolls
Vegan / Gluten free
Preparation time : 1h / Cooking time : 25 minutes
1 Chioggia beet
4 leaves of kale
1/4 red cabbage
1 small sweet potato
10 rice leaves
Peanut sauce :
1 tbsp peanut butter
1 tbsp tamari
4 tbsp water
1 pinch of sesame seeds (optional)
Cut sweet potatoes into strips like to make fries. Mix with 1 tbsp olive oil, then spread them on a baking sheet. Cook for 25 minutes.
Meanwhile, wash and cut the vegetables so that everything is ready when making rolls.
Once the sweet potato is cooked, soak the rice paper in water (in a slightly shallow dish).
When the leaves are moistened, put them on a plate. You can then garnish. I started with three thin slices of beet, a few leaves of kale, red cabbage, roast potato and avocado. I finish with sprouts seed. Fold over in sides and roll. Be careful to securely tighten the rolls.
For the sauce, mix simply all the ingredients.
