Eating vegetables is a very good thing for health. This is the simplest way able to benefit from all the benefits of food. However, I am not so much for this mode for “raw food”. I find it excessive among the vegans. This power supply comes down to raw fruits and vegetables and some seeds and nuts… A good diet should consist of raw products with lots of fruits and vegetables as well as legumes and cereals! That’s why I wanted to add brown rice contains fiber and protein. Broccoli and beets give you vitamins and antioxidants. Finally, I sprinkled a few pumpkin seeds on my salad, super high in protein!
Broccoli is a vegetable that must be the most eaten raw. This is the only way to eat to have all its benefits. Thus, it will bring you a lot of minerals with potassium, calcium and magnesium. It is also an antioxidant and anti-inflammatory. Beet for its great antioxidant, known to prevent aging. What have lovely skin to look 20 years younger!
Raw broccoli salad with Chioggia beet
For 2 personnes
Vegan / Gluten Free
Preparation time : 10 minutes
1/2 head of broccoli
1 Chioggia beet
2 cups cooked brown rice
2 handfuls of pumpkin seeds
2 tbsp chopped parsley
With a mandolin, make thin slices of beetroot and broccoli (more enjoyable to eat that way). In a bowl, combine broccoli, beets, brown rice and pumpkin seeds.
To season, pour 1 1/2 tablespoons cider vinegar, 2 tbsp olive oil, sprinkle with parsley and pepper.
