Ah curry, India… It is a country that makes me dream. This culture, so different from ours, seems sublime to me. The diet is full of colors, vegetables, fruits and especially spices! It’s very easy to eat vegan in India. It is the same in Indian restaurants in France. There are always several vegans dishes to the cards! And it’s always delicious.
I have a lot of rice that accompanies dishes in sauce. You can choose several varieties and they are always perfumed with spices, nuts and raisins. I am lucky to have an Indian restaurant one block from my home. What it offers is always a treat.
There are still so many Indian dishes that I have to test and taste! For today, it is a great classic : curry. Instead of making it with meat (as most French do …) I chose a vegetable, cauliflower. It was very good and mostly really simple as a daily dish. I’m sure it’s perfect in a lunchbox for example. You prepare it in the evening and hop, you have your healthy lunch the next day.
I was inspired by all these beautiful Indian rice and I concocted a mixture of brown rice and red rice, not to mention a little cashew nuts!

Cauliflower curry and red rice mix
For 4 personnes
Vegan / Gluten Free
Preparation time : 15 minutes / Cooking time : 30 minutes
1/2 red curry paste
1/2 bunch of coriander
salt and pepper
To accompany :
Some cashew nuts
rice (brown, red, basmati, etc.)
Chop the shallot. In a pot, sauté in 1 tbsp olive oil over medium heat. Add the curry paste and mix. Sauté 5 minutes.
Cut the cauliflower into pieces and add it to the pot. Mix so that the pieces are impregnated with the curry. Add 1 glass of water. Mix and cover. Simmer 20 minutes.
Add the chopped parsley, stir and leave for another 5 minutes. If the cauliflower is cooked but firm, it’s ready!
Serve with rice and crushed cashew nuts.
