Do you know the purslane? I must confess that I didn’t know his existence before my grandfather makes discover me. He himself didn’t before know. Purslane kept pushing between his vegetables and he spent his time to snatch into thinking it was a weed. Until the day when one of his friends made him realize that he had to stop. Purslane is sold extremely expensive so you better enjoy it in his garden than buy.
This little plant grows so easily in a garden, a bit like lambs lettuce. It is low in calories but will bring you a lot! Especially for vegan. It contains a lot of potassium, magnesium, calcium or omega 3. It also has antioxidant strength. Finally, it has many vitamins B and vitamin C. It is therefore necessary to stop the snatch and throw! 🙂
But how to consume it? Some eat like salad. Honestly, I find its taste is quite strong and I prefer to mix with other vegetables. Purslane is excellent with tomatoes from the garden for example. You can also add to your salads. I have never tried to cook it but I advise against it because it would risk losing all its nutritional values.
To prepare it, simply rinse well and keep only the small leaves. The stem may not be eaten (such as kale).
