Autumn has come in one night, don’t you think? I don’t know how to dress, afraid of being too hot or too cold… Well, it’s no big deal, I have lots of good recipes for this rainy season.
The cold doesn’t stop me for eating salads. I certainly appreciate more good hot dishes but I also love some cold dishes. This salad is totally season. You will find these products at your small producer (except perhaps the pomegranate which is produced mainly in India).
Finally, it is perfect for your health! Broccoli is great for good vision thanks to its antioxidants, it is anti-inflammatory and prevent breast cancer. Chickpeas are antiseptics. Pomegranate is good for the skin and acts against cholesterol. Quinoa provides you fiber and protein. As for the apple is an appetite suppressant, enough to last all day without snacking!
Fall salad with apples, broccoli and quinoa
For 1 personnes
Vegan / Gluten free
Preparation time : 10 minutes
1/3 to 1/2 broccoli head (steamed)
1/2 cup cooked quinoa
1/4 cup cooked chickpeas
2 tbsp pomegranate seeds
1 small organic apple
Nothing simpler, mix all ingredients in a bowl.
Season with 1 1/2 tablespoons olive oil and 1 tbsp cider vinegar. Pepper. You can add salt but I do it less and less (due to water retention and clogs the arteries), I use quite often suddenly gomasio.
