I think it is difficult to make a complete meal that this one. You absolutely have everything you need with this dish.
I had tasted carrots with turmeric and I really loved it! It inspired me a lot for this recipe. We find there many, many things. All is well ! The second advantage to this beautiful plate is that it is also good hot or in salad. This is really perfect 🙂

Carrots with turmeric accompanied by quinoa, kale, green beans and chickpeas
For 4/6 personnes

Preparation time : 30 minutes / Cooking time : 20 minutes
1 small bunch organic carrots
2 large handfuls green beans
2 or 3 stalks kale
1 cup uncooked quinoa
1 (medium) can chickpeas
2 cloves garlic
1 1/2 tsp turmeric
juice of one lemon
salt and pepper
Start by peeling and cutting carrots in strips. Finely chop the garlic and make it back 2 minutes in a pan with a little olive oil. Add carrots and turmeric, salt and pepper .. Saute for 5 minutes on high heat, then 10 minutes a notch below and cover.
Next, start cooking your quinoa. I cook it in the rice cooker in 3 quantities of water.
Stir regularly carrots, they must be melting and slightly caramelized on the outside.
Cook the green beans with steam cooker.
Once everything is cooked, rinse the chickpeas and drain. Cut the kale into small pieces.
Place all ingredients in a large bowl, season and pour the juice of a lemon.
