Hello everyone ! This is my second video !! I am quite happy, I will not deny that it’s a lot of work but it relaxes me. I really enjoyed doing these sweet potato brownies. Today is a summer salad. The time has clearly refreshed on the french capital since the weekend but I am in a mood conducive to fresh salads.
If you know me, you must know that I love to prepare simple things. This salad is easy to prepare, it is a joy! You can also see it on the video. Do not very original ingredients. But believe me, the result is refreshing and perfect to enjoy under the sun (like a picnic on the beach!).
Summer salad with mustard dressing
For 2/3 personnes
Vegan / Gluten free
Preparation time : 15 minutes / Cooking time : 20 minutes
4 large handfuls rocket
1/2 cup raw wild rice
1 small tin organic corn
1 handful sunflower seeds
3 tbsp olive oil
1 tbsp cider vinegar
1 tsp mustard
salt and pepper
Cook wild rice in 2 cups of water for about 20 minutes.
Simply prepare the salad by placing in a bowl arugula, tomatoes and avocado into cubes, corn (drained and rinsed), wild rice and sunflower seeds.
In a small bowl, combine olive oil, cider vinegar, mustard, salt and pepper and chives (finely chopped). Pour over salad and serve.
