Ah… the sweet potato remains one of my favorite foods… Even the spring I want it in my salads. I made it very simple for now, as you can see, this recipe is pretty close to another that I had already made. But never mind, it’s pretty and delicious so I share all the same with you.
It’s vegetarian but it can become vegan very simply by removing only the feta.
Sweet potato and chickpeas salad
For 2 personnes
Vegetarian / Vegan
Preparation time : 20 minutes / Cooking time : 30 – 45 minutes
1small sweet potato
1/2 can of chickpeas
1/2 glass wild Camargue rice
4 large handfuls of lambs lettuce
feta (or not if you’re vegan)
salt and pepper
Peel and cut into cubes sweet potatoes. Mix the pieces with olive oil, salt and pepper. Bake 20 min at 180°C.
Cook rice. Bring water to boil, add the rice, reduce and cover. Cook 30 to 45 minutes.
Let cool rice and sweet potato.
Prepare salad by cutting cucumber slices and draining and rinsing chickpeas. Serve with lambs lettuce. Then add the rice and sweet potato cubes.
For seasoning, pour into each plate 2 tablespoons olive oil and 1 tablespoon apple cider vinegar, salt and pepper. You can add some sprouts. This is very healthy and it brings crisp.
