I was a little absent lately on Instagram as on the blog, I was busy… My exam fast approaching and I will not deny that I have a lot of work. But I come back today with this gorgeous purple salad. I enjoy a lot to make salads with color codes.
To celebrate the arrival of the good weather, I wanted to do something fresh, pretty and nourishing. I had already told you about my passion for black rice in this post, I don’t get enough, I always find it good. As beet, it’s also something that I adore. With pomegranate seeds, the combo is perfect and red cabbage brings crisp.
This salad also has many benefits that are:
- black rice is a powerful antioxidant, significantly better than white rice, a simple spoon possess more antioxidant that a portion of blueberry!
- beetroot is rich in antioxidants but would be rich in nitrate which gives beneficial effects for workout.
- raw red cabbage is good for the stomach, it’s a remedy for infections of the stomach and intestine.
With such good things for health (and equally delicious on your plate), so don’t do without!

Purple salad with beetroot, red cabbage and black rice
For 2 personnes
Peparation time : 15 minutes / Cooking time : 1 hour
1/2 cup black rice
1/4 red cabbage
3 tablespoons pomegranate seeds
2 large handfuls of baby spinach or corn salad
salt and pepper
Start with cooked black rice. Bring water to boil and cover. Cook the rice for an hour. Once cooked, rinse in cold water in the dripping.
Grate the cabbage, cut in cubes beet.
Simply serve with lamb’s lettuce, red cabbage, black rice, beets and season with 3 tablespoons olive oil, 2 tablespoons balsamic vinegar, salt and pepper and sprinkle with chopped chives.
