I wanted to make vegan burritos for a lunch with fresh and healthy products. It’s so simple and so good. I tested for lunch but this is exactly the kind of dish which can be prepared with friends on a Friday night. It is also an opportunity to everyone eat vegan cooking without them complain. Believe me, the animal products doesn’t miss in that little preparation.
For 4 personnes
Vegan / Gluten free
Preparation time : 20 minutes / Cooking time : 1 hour
1/2 cup red raw beans
2 tbsp Mexican spices
Soak the beans in a bowl of water overnight. The next day, cook in boiling water for 45 minutes.
Pour the cooked beans in a saucepan, add a little water and pour Mexican spices. Stir regularly and add water. Sauté about 15 minutes.
Meanwhile, prepare all the rest, cut the avocado, tomatoes into small cubes, the cucumber in slices and put salsa in a bowl. You can add anything you want it’s very simple here because it was for lunch.
It’ll just prepare burritos yourself by adding what you want in your tortillas.
