Seriously, did you see this weather? This rain never stops falling and I’m freezing, I think I even caught a bad cold because of this cooling. Where’s the global warming? I want to wear t-shirts and dresses!
So, I don’t want iced tea while returning home but a hot soup. As I am an optimist, I say that the sun will soon show then I try to prepare my skin. This soup is perfect for this!
Beta-carotene contained in carrots is a sun preparation. It triggers the natural process of skin coloration. Sweet potato is also very rich of it. As for the parsley, it’s good to detoxify your body. This will be perfect to prepare for the test of swimsuit. And pumpkin seed is energizing!
Apart from all that, I wanted to do a parenthesis and say that I’m sorry for my absence. I was full of revisions exams lately. My last test is tomorrow. I hope validate all this because nice things waiting for me…
Carrot, sweet potato and parsley soup
For 4 personnes
Preparation time : 15 minutes / Cooking time : 45 minutes
1 small onion
1 sweet potato
1 bunch of parsley
salt and pepper
Pour into a saucepan one tablespoon of olive oil. Chop the onion and fry it in olive oil for 3 minutes. It must become translucent.
Add sliced carrots and sweet potatoes into chunks. Sauté together for 5 minutes. Add 1 liter of water (I don’t use stock as I find them too salty and oily in industrial versions and I did not have time to make myself, I further think it brings nothing). Reduce heat, season and cover. Cook for 20 minutes.
Add the chopped parsley and cook for roughly 20 minutes.
When vegetables are melting, mix the preparation (either in a blender or with a blender in hand). See if you must add a little water to mix.
You can serve with some pumpkin seeds and parsley sprigs.
