I had already spoken of granola, that of Charles Vignon, an organic granola with super fruits. This is ideal when you don’t do it by yourself. Today I want to give you a recipe for homemade granola, simple and really delicious. This is gluten free, refined sugar free and vegan, what more?
This recipe is really nice in the morning with almond milk and fruit. The banana flavor is present but it is really good. Mashed banana is used as a binder with maple syrup.
In the out of the oven, don’t be surprised if the granola may seem a bit soft, it’s normal, it will harden to become crisp as they cool. Let the good 30 minutes on the baking sheet before putting jar.

Banana Granola with cranberries
For 1 large jar
Vegan / Gluten free / Refined sugar free
Preparation time : 10 minutes / Cooking time : 30 minutes
3 cups (720 ml) gluten free oats (in organic stores)
1/3 cup (80 ml) melted coconut oil
3 small ripe bananas (or 2 large)
1/2 cup (120 ml) maple syrup
1 cup (300 ml) puffed quinoa
1/2 cup (120 ml) sunflower seeds
1 tsp cinnamon
1/3 cup dried cranberries
Preheat oven to 350°F (180°C).
Mix all dry ingredients (oats, puffed quinoa, sunflower seeds, cinnamon).
Mash bananas, add melted coconut oil, maple syrup and mix. Add these ingredients to the dry ingredients. Mix with a spatula.
Line a baking sheet with baking paper. Spread the mixture over the plate with a spatula. Bake at 350°F (180°C) for 15 minutes. After this time, go out, mix by inverting the granola. Re-bake for 15 minutes.
Remove from oven and let cool on the sheet for 15-30 minutes. Add the cranberries and put in a jar. The granola can be keep up to 1 month.
