As I have told you many times, I love Mediterranean food and found in it many small fresh preparations to spread including the famous hummus!
This spreadable cream or to taste with vegetable sticks is very famous in the healthy sphere for many reasons. It is made from chickpeas that are rich in protein. In this way, hummus is a good snack. But you can also add it to your salad bowl. It provides texture and a little more.
My version of hummus was completely improvised but it is delicious. I wanted something simple and made from what I had on my kitchen.
All of these are rather simple and I think you’ll have everything you need ! The only thing perhaps a little “exotic” is the tahini. It’s pretty funny. Sesame puree can please me as much or not at all. I find it inedible alone. By cons, it worked as sauce in this recipe, I like and I have to admit that adding a tablespoon in hummus gives a little more.

Hummus with herbs
For 1 medium bowl
Gluten Free / Vegan
Preparation time : 20 minutes
1 medium can of chickpeas
1 garlic clove
2 tablespoons tahini (sesame purée)
the juice of 1/2 lemon
1 tsp salt
1 bunch of parsley
1 bunch of chives
4 tbsp water
In a food processor, pour chickpeas, mixed for two minutes.
Add the garlic, tahini, salt, lemon juice and mix again to obtain a cream.
Add about 1/3 of the parsley and chives and pour the water. Mix 5 minutes. If hummus is not creamy enough, do not hesitate to add more water. You can also add more herbs if you prefer.
And now, there is more to serve in a nice bowl and serve it as an appetizer or in your vegan salad of the day!
