Today, I return to the course and I need a salad at lunch that is fresh and full of energy to be in shape all day. This green salad with all these super foods will be perfect.
I don’t know about you but I love the broccoli salad, I think it works very well even cold. For cons, I know that for some people it is worse, you be the judge! You keep me informed 😘
It must also be said that the lamb’s lettuce is just from the garden of my grandfather !! It’s not great ? Frankly, I love Paris but there are times when I would leave everything to mount a farm and growing my own vegetables. Especially that it is not always easy to find really good organic vegetables.

Green salad of avocado, broccoli, farro and lamb’s lettuce from the garden
For 2 serves
Preparation time : 15 minutes / Cooking time : 20 minutes
2 cups broccoli
1/2 can of chickpeas
1/3 cup raw farro
4 handles lamb’s lettuce
4 tablespoons pomegranate seeds
olive oil (or avocado oil)
salt and pepper
Cook the farro in 1 1/2 cup of water. Bring to a boil then cover and reduce. Cook for 20 minutes.
Cook the broccoli in boiling water about 5 minutes to keep them crisp.
Drain and rinse the chickpeas.
Prepare the salad with lamb’s lettuce, avocado chopped (1/2 per person), broccoli, cucumber slice, farro, chickpeas, feta and pomegranate.
For seasoning, 2 tbsp olive oil, 1 tbsp cider vinegar (per person), salt and pepper and sprinkle with chives. Serve!
