Hello ! With this Monday of holidays for some (which is not my case, lucky guys 😋), I offer a recipe of a vegan banana bread with whole wheat flour and figs. It’s a healthy recipe that fits enjoyed the morning at breakfast. For my part, I have already fully adopted!
I cut myself a few slices and add some chia seed and berries jam and it’s a delight, I love it ❤️
This recipe is healthy, I adapted to make it better for health. I searched a lot of recipes to suit my own and looking for vegan versions, gluten free or sugar free and I created THE recipe. I think that’s what I like in the kitchen, the creative side. Mixing the ingredients to achieve with happiness something delicious and good for health. Sounds a little laboratory but it’s fun.
This version of the banana bread is not gluten-free because I used whole wheat flour (which still remains better health). I guess you can substitute with brown rice flour. By cons, it is vegan and no sugar added (and not just without refined sugar). No syrup or honey. Bananas by itself is enough sugar for my taste, like the figs that I added.

Banana Bread with figs and whole wheat flour
2 ripe bananas
1/2 cup almond milk
2 tbsp melted coconut oil
1 tbsp flaxseed ground + 2.5 tbsp water
3/4 tsp vanilla extract
2/3 cup whole wheat flour
1/2 cup oatmeal
2 tbsp flaxseed
1 tbsp chia seeds
2 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
figs (frozen for me)
Mix the tablespoon of ground flaxseed with 2 1/2 tablespoons of water and let stand 5 minutes.
Mash the bananas, mix with almond milk, melted coconut oil, vanilla extract and preparation with ground flaxseed.
Mix dry ingredients, flour, oats, cinnamon, salt, baking powder, flaxseed and chia seeds and figs cut into small pieces (quantity depending on the taste, about 5/6 here).
Add the dry ingredients and the liquid preparation, combine. Pour into a loaf pan and bake 45 to 50 minutes in a preheated oven at 350°F (180°C).
