But what a cold! It’s crazy, two days ago I was too hot in little jacket and today even with a down jacket I’m sure to freeze me! To believe that we moved from winter box to summer box overnight. With this cooling, fruits and vegetables will start to disappear store shelves to my dismay … So, enjoy the last tomatoes for a salad. I know, you’ll say “A salad? In this weather?”. Yes, a salad because I go to college and that is not always easy to prepare anything in a lunch box. Never mind, I’m already working on the subject for next week. Meanwhile, here are a delicious and nutritious salad for a hard day of work or study, all vegetarian! Moreover, endives are in season.
For two :
1 big or 2 little endives
1/2 glass of lentils
3 handfuls of lamb’s lettuce
2 tbsp olive oil
1 tbsp balsamic vinegar
1 tbsp mustard
salt and pepper
To make this salad nothing more simple, start preparing your lentils. Cook them in a little water and stir regularly until they are cooked, add occasionally a little water. Putting water regularly helps me to see if they are cooked or not. Pass them under cold water and reserve in the fridge.
Meanwhile, cut your endive into strips (removing the center) and diced tomato.
In your dish or your lunch box, add the lamb’s lettuce, endive and tomatoes. Get out of the fridge lentils and add them. Finally, crumble feta on top.
For the dressing, in a small bol, mix the olive oil, balsamic vinegar (I know I put all the time, but I love it so much!), Mustard, salt and pepper. Then, pour it on your salad and mix well.
