As a “French”, it is unforgivable not we know make a good omelette. This one can contain all sorts of things (potato, cheese, etc.), here I have made with parisian mushrooms (go to the end of cliché 😉). I love the omelets and the main advantage of this dish it’s simplicity and speed. You come breezed your lunch at home and nothing in the cupboards? Never mind, he must remain an egg or two, some herbs at the edge of edible and vegetable of any kind. With these unsavory foods, you can feast. It’s also a pretty healthy meal, no need to add fat (actually, it’s even better not to add any oil or butter in your pan, the egg will cook just as well!). Accompanied by a lamb’s lettuce or arugula and it’s perfect!
Ingredients for 2 persons :
2 handfuls of Parisian mushrooms
salt and pepper
1 tsp olive oil (to sauté mushrooms)
Start with your mushrooms sauté in a pan a (large enough for the omelet, it will be the same) with a teaspoon of olive oil (it will be evaporated before adding the eggs). Stir from time to time and add salt and pepper.
Beat four eggs together in a bowl and season with salt and pepper.
Once the mushrooms are cooked, pour over the eggs and add the parsley (chopped beforehand). Depending on your taste, leave more or less cooked. To me, a good french omelet is flowing but everyone’s tastes!
Serve immediately with a salad.
