Hello everyone! I hope that you are all well and that your holidays are preparing slowly but surely. As everyone don’t take any vacation during this time, I wanted to think of all those who work, are ongoing or revise partial. So I’ve prepared a winter “salad in a jar” that you can carry wherever you want, especially at work.
This version is very healthy, it will bring you all the energy you need during these difficult climatic times. The chickpeas will give you protein and the black rice, in addition to being a super antioxidant (acts against aging) is rich in fiber, these allow you to be full longer! As for the kale, it will bring you iron, essential to the metabolism and the manufacture of red blood cells.
I hope this simple recipe will give you some ideas, including light meals before the abundance of Christmas food and New Year’s Eve.
Winter salad in jar : sweet potato, red kale, black rice
Vegan / Gluten free
For 2 jars
Preparation time : 10 minutes / Cooking time : 30 minutes
1/2 can chickpeas
1 glass raw black rice
1 sweet potato
3 beautiful branches of red kale (but purple according to me)
2 tbsp olive oil
1 tbsp Mustard
1 tbsp balsamic vinegar
salt and pepper
Rinse and cook black rice at the cooker rice with 3 x its volume in water.
Peel and dice the sweet potato, place the pieces on a baking sheet covered with parchment paper and bake for 30 minutes at 180°C.
After 30 minutes, the rice and sweet potato are cooked. Drain and rinse the chickpeas and wash the kale. Cut the leaves from the center branch.
To prepare the jar, start with chickpeas, black rice, sweet potato and kale. Pour on top the vinaigrette (mixed) with the olive oil, mustard, balsamic vinegar and salt and pepper.
